Sens x The Nest
Birdy (Christian Vogel) is setting up his “The Nest” at Sens this summer.
The head chef of Birdy’s by Achtien in Brunnen is heading to Vitznau this summer for the Sens pop-up, bringing his Michelin-starred “The Nest” with him.
Before Birdy took off in Brunnen, he had already conjured up his first dishes during test cooking sessions with Jeroen Achtien at Sens in 2022, prior to his restaurant’s opening.
The cuisine of nature-loving Birdy is shaped by the season, featuring the region’s finest ingredients, which he often forages himself or sources from producers he knows personally.
His signature style and philosophy of seasonal and regional cuisine is minimalist and free of frills—or, as Birdy likes to put it succinctly, “texture and flavor.”
For the menu at the Sens pop-up, he’s brought a few signature dishes, as well as new creations featuring ingredients he’s gathered and pickled himself during his forays through the region’s natural landscapes.
Christian Vogel will be cooking at the Sens summer residence from Sunday through Tuesday, between July 13 and September 1, 2026.
